The vibe

Minimal lives up to its name. When Food & Pleasure visited in early 2024, a few months after it opened, it described a room that is “100% minimalist,” worked in black and white and built around a large bar. Atly’s listing adds granite countertops, an intimate feel and calm music. This is a place to sit at the bar, talk and pay attention to what’s in the glass, rather than a club.

Two years on, it was still drawing notice: Chilango’s May 2026 guide to eating and drinking in Tijuana listed Minimal next to Aruba Day Drink among its bar picks and summed it up as “sencillez bien ejecutada,” simplicity done well.

What to expect

The menu reworks classics. Chilango pointed to a Mojito made with matcha, a Paloma with grapefruit and palo santo, and one of the house drinks, the Piñata, with mezcal, pineapple and tamarind. Earlier menus, as Food & Pleasure described them in 2024, included a “Negroni in Japan” with Roku gin, jasmine tea, Campari and yuzu; a Vesper with Lillet Blanc and lychee; and a tequila drink called Jalisco with Ancho Reyes Verde, agave honey and habanero tincture. Menus change, so read those as a sense of the bar’s style rather than a promise.

Atly’s listing also mentions that the cocktails are well explained, so if a name on the menu means nothing to you, ask the bartender to walk you through it; with a menu built on twists, that’s half the fun. None of our sources mentions a kitchen or food menu, so plan dinner before or after.

Prices and entry

We haven’t found a published price list or any mention of a cover charge, so ask for the menu when you sit down. It’s a bar: 18 and over, and bring ID. Thursday to Saturday are the late nights, with service until 2 a.m.; Sunday is the early one, closing at 11 p.m.

Getting there

Minimal is at Av. Ensenada 2269 in Colonia Cacho; some listings, including Atly, give the colonia as Madero (Cacho). Use the map link above, and check the bar’s Instagram, @minimal.cocktailbar, for any change to the hours before you go.
