Carmelita Molino y Cocina is the restaurant that made Tijuana’s food people start talking about corn. Chef José Figueroa named it after his grandmother, who got him cooking, and built it around a molino: corn from small family farms across Mexico is nixtamalized and ground on site, and the tortillas are pressed on a comal near the front door. It holds a Bib Gourmand in the MICHELIN Guide Mexico, the distinction for good cooking at a fair price, and it is open only four days a week, mostly for breakfast and lunch. It is for people who plan a weekend morning around a meal.
The food
Everything starts with the masa. The menu runs to tacos and tostadas on fresh tortillas, ceviche, egg dishes and a tamal of the day; Michelin’s inspectors recommend the chilaquiles with salsa borracha and that tamal, a large banana-leaf parcel that has come filled with braised beef rib and roasted local cherry tomatoes. Diners also point to the huevos enbirriados, enmoladas, cauliflower tacos with mole, a jurel tostada and a short rib dish, plus a blue-corn agua fresca. The menu changes with what the farms send, so do not expect the same list twice. Coffee is taken seriously, and there is a small drinks list.
What to expect
An airy, communal room with warm wood, tile-and-concrete floors and a screened roof that lets in light, with the comal and the grinder in view. It is casual and family-friendly, busy on Saturday and Sunday mornings, and slower on Thursday and Friday. Service is relaxed; this is not a place to eat in a hurry. Reviewers suggest reserving because demand is high and the room is small, and checking the kitchen’s closing time before you order dessert late in the service.
Prices and entry
Mid-priced for a chef’s kitchen and the reason for the Bib Gourmand: a full breakfast with coffee costs less than brunch across the border. Cards are accepted. No cover. Reservations are made directly with the restaurant (Michelin lists no online booking), and the Instagram account is the usual channel for availability and menu updates.
Getting there
Jiménez 7771 is in Colonia Independencia, a residential neighborhood a few minutes’ drive from Zona Río and about ten minutes by car from the San Ysidro border. It is a residential street rather than a boulevard, so give drivers the full address. Street parking is possible but limited on weekend mornings; ride-hail is easiest.
Good to know
- Michelin lists Thursday to Sunday, 9 a.m. to 3 p.m., with Monday to Wednesday closed. Google adds an evening block on Thursday to Saturday; confirm on Instagram before planning dinner.
- Do not confuse it with La Carmelita, a food truck that has operated at Telefónica Gastro Park.
- The menu is friendly to vegetarians thanks to the corn, mole and vegetable dishes.
- Pets are allowed only in the outdoor seating.
