This Easter season, one of the delightful ways to celebrate in Baja is a classic Easter egg hunt. A short drive through sleepy grapevines and orange groves leads you to the picturesque hills of the Guadalupe Valley, home to the En’Kanto winery, known for its annual community egg hunt festival. A special feature of this festival is a visit to the winery’s heritage chickens, which are among the few purebred chicken breeds found on this side of the border, famed for producing rainbow-colored eggs.

The birds thrive in the environment, with loose hay laid for them to spread around — a task they thoroughly enjoy. Cassie explained the challenges of feed costs and the intricacies of breeding, including the balancing act of too many roosters.
As with dog breeding, creating specialty breeds of chickens involves careful planning for egg production, plumage, and more. Breeding requires strategic pairings, and Cassie spoke of the “Chicken Math” phenomenon — starting with a few chickens but inevitably ending up with many more. With incubators on rotation, the hatchery is a lively place with new chicks regularly joining the flock.
Cassie’s passion for purebred chickens has led to the potential for selling them, with interest in rare breeds growing. Especially for Easter, there’s excitement over the prospect of gifting little chicks. Meanwhile, the enchanting landscape of En’Kanto winery, dotted with ancient granite boulders, offers visitors a unique wine-tasting experience amid stunning views. The opportunity to enjoy an omelet made with eggs from the estate’s special hens only adds to the allure.
