For many years, Baja California has been synonymous with wild Spring Break festivities. However, there’s a new side of Baja waiting to be explored, one that offers more than just margaritas. This Easter, leave the well-trodden paths for an adventure amidst the scenic landscapes and cultural offerings of the Guadalupe Valley.

Nestled among grape vines and orange groves lies the En’Kanto winery, a hidden gem where every year, a community Easter egg hunt delights both locals and visitors. The event also offers an introduction to the heritage chickens of Baja — one of the very few places specializing in purebred chicken farms, producing coveted rainbow-colored eggs.

The humble egg, rich in symbolism and tradition, heralds new life and has been a staple in Easter celebrations for centuries. The tradition of Easter egg hunts can be traced back to 16th-century Germany, symbolizing life and resurrection through the Protestant leader Martin Luther.

During my visit, Tom and Eva welcomed me to their friend Cassie’s farm, where the journey began with a simple desire for fresh breakfast eggs. Their vision now encompasses a fully operational purebred chicken farm. On a tour, Cassie, affectionately known as the “Chief Hen’Kanto Officer,” introduced me to her poultry with a humorous twist, narrating their roles and quirks.

Cassie shared insights into the meticulous breeding process, expressing her initial reluctance to keep roosters due to their early morning crowing. Her love for the craft, however, morphed into an obsession, often referred to humorously as “Chicken Math,” where a few birds turn into a thriving flock.

Inside the chicken enclosures, it’s a burst of vibrant plumage and energy, from the striking hues of the roosters to the quizzical feathered hats of the hens. In breeding, Cassie emphasized the importance of precise conditions for purebred chicks, which sometimes even require special enclosures away from the general flock.

The joy of breeding chickens in Baja includes offering unique breeds to enthusiasts, not just for their beauty but also for functional purposes like egg-laying. With new Polish breeds on the horizon, Cassie cheerfully embraces her growing brood.

En’Kanto winery is a feast for all senses, whether it’s witnessing ancient boulders dotting the landscape or savoring home-cooked delights at their restaurant. With the vineyard blossoming in spring and grapes ripening by autumn, it’s the perfect place for a tranquil retreat. Don’t miss out on their special omelets made from their own rainbow eggs.
